It’s widely agreed that “high quality cake pans can make or break a backing recipe” but what are they made of?
- aluminum: high heat conductor, easy to maintain but it scratches and dents easily
- silicone: popular material due to the ease and flexibility of handling and no scratching ability but it’s pricey
- copper: durable material, high heat conductor, not as expensive and that will last for years but it needs hand washing.
